WHere is a simplified interpretation of a drink from the seasonal cocktail list. Designed as a batch premix which is loaded with the essence of the Christmas time, rendering it ideal for hosting a festive gathering. Reserve the remaining cordial to use in breakfast cocktails, desserts, or to make more rounds of the drink.
The Bikini Cocktail
Serves 10 people
For the Clementine Syrup (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (produces 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
Making the Syrup: Combine every items into a pot, heat until it reaches a simmer, agitating so the sugar melts. Then, turn off the heat allowing it to cool completely. Pour to a sealable bottle, cap it and store in the refrigerator, where it will keep for around four weeks.
To make Cocktail Base: Mix the specified liquid ingredients into one sizeable container, allow it to infuse for one hour, then pass it through best through muslin, making it perfectly clear.
When ready to serve: Add 85ml of your batch mix into a mixing glass packed with ice, and stir gently for one minute to chill. Filter into an frosted cocktail glass or a similar vessel, top with some cranberries adding the final touch with a quick spritz of the essential oil above the glass.
